Can I just show the code on my phone at the table?

No. An order placed inside a delivery app is billed by the app, which settles with the restaurant separately, so there is no field for a Ruby Tuesday gift card at that checkout. This card is for eating in or collecting in person, where the printed code goes to the cashier with the check.

Does the balance expire, and what if I lose the printout?

The balance does not expire and is not subject to inactivity fees, so there is no clock on it. Losing it is the real risk: Ruby Tuesday states that lost, stolen or damaged cards will not be replaced.
